The edible kernels are then extracted by peeling for further process of cleaning and washing of the extracted kernels.

Cleaning & Washing

The extracted kernels are meticulously clearned to remove impurities, followed by thorough washing. These essential steps ensure the purity and quality of the Makhana seeds for processing.

Sun Drying

After cleaning, makhana undergoes sun drying to reduce moisture, enhancing shelf life. Exposure to sunlight helps preserve nutritional content, ensuring crips and flavourful snack.

Pre-heating & Tempering

Makhana processing includes pre-heating and tempering steps, enhancing flavour and texture. Pre-heating ensures even roasting, while tempering helps in loosening the kernels with the hard seed coat.

Roasting & Popping

Pre-heated and tempered kernels are roasted in a pan. As soon as the hard shell of the seeds breaks, rhe kernel pop come out which is called "lawa'.
